If I don't have dental / medical insurance can I write expensive dental bills off or other medical bills?

On line dental insurance does not cover that much and there is usually a waiting period.

Qualified medical expenses that you pay, not the amount of the bill, can be included in Schedule A. The deduction is limited to the excess of 7.5% of your adjusted gross income. That is, if your AGI is $20,000, only medical expenses in excess of $1,500 may be deducted.
